Happy Monday friends! Hope you had a great weekend. My mom and aunt came into town to visit so we had a blast taking them around the city! We have been lucky to have a lot of visitors in Boston so far. I'm just going to jump right into today's post since it's going to be a long one!
Today I just wanted to share what I've been eating lately because I feel like I've gotten into a pretty healthy routine with my diet. Obviously I still occasionally have a bad day and eat an entire bag of gummy bears but don't we all?! Let me know if you like these kinds of posts in the comments below. I'm thinking about adding more diet/fitness content to the blog!
Breakfast
The main breakfast I go for during the week is just coconut yogurt (since regular yogurt hurts my stomach) with fruit and sometimes I will add granola in the mix. Lately I've been trying to watch my carbs so I have been skipping out on the granola but there are some really great paleo granola options out there! It's just so easy and I never really get tired of it.

Gluten-free waffles are SO good and I almost always pick up a box when I'm at the store. It's just nice to have them as a treat on the weekends topped with fruit and reduced-sugar syrup!

Bagel thins with avocado and egg and Everything But the Bagel seasoning from TJ's is an AMAZING combo! Highly recommend. It's relatively low carb and you get a good amount of protein from the egg. Sometimes I'll do just an egg white to lower my fat intake.
Lunch

With lunch I am such a creature of habit. I pretty much alternate between the same two things OR if we have leftovers sometimes I will eat those but typically it's either a very simple tuna salad or a turkey wrap on a whole wheat tortilla. I usually put the tortilla on the stove for a bit with a little bit of coconut oil to make it crispy but if you're working in the office it still tastes just as great without that step. On my wrap I usually do turkey, lettuce, sprouts, a little bit of mayo and tomatoes.
Dinner
LOVE shrimp tacos on corn tortillas. I usually just saute up some shrimp and season it with cumin, paprika, chili powder, cayenne pepper and garlic powder for the perfect taco blend. I put the shrimp on a corn tortilla usually with some avocado, lettuce, shredded cheese and salsa. Super easy!
This sweet potato/quinoa casserole was DELICIOUS and I recipe is via
Fit Foodie Finds. Ever since finding her Instagram, I have been really loving her recipes. Definitely recommend checking it out and definitely trying out this casserole. It was VERY easy and we had leftovers for a few days!
Grilled chicken salad is another go-to because it's so easy, healthy and it's nice to make the chicken in bulk because I can grab it and heat it up for lunch for a few days after! I love to top it with either Greek Yogurt Ranch or an Annie's dressing. They are really tasty!
When we go out to eat, my go-to order is always a lobster roll a.) because they are delicious and b.) because I'm on a mission to figure out who has the best lobster rolls in New England haha! It's ambitious I know but someone has to do it! So far James Hook Co. is my favorite but I have heard great things about Row 34 so that's next on the list.
