The BEST Oatmeal Chocolate Chip Cookie Recipe


Happy Monday friends! I hope you had a nice Easter weekend staying in. Easter is such a special holiday so not being able to spend it with the rest of my family was tough but Steven and I enjoyed it as much as possible. 

Baking has been one thing I really enjoy doing while home so today, I wanted to share with y'all my recipe for Oatmeal Chocolate Chip cookies. I initially followed a recipe I found online but I swapped out some ingredients to make them a little bit healthier. Granted, they're still not healthy but definitely could be less so! They are SO good and come out so chewy and delicious. Steven absolutely loves them.

Ingredients:
1 cup of flour
1 Tsp of cinnamon
1/2 tsp baking soda
1/2 tsp salt
3/4 sticks of butter
1/2 cup of coconut sugar
1/4 cup of granulated sugar
1 egg
1 tsp of vanilla extract
1 and 1/2 cups of rolled oats
1 cup of chocolate chips (I buy semi-sweet)

1.) Preheat Oven to 350 degrees.
2.) Whisk together the flour, cinnamon, baking soda and salt in a bowl
3.) In your mixer, add the butter, coconut sugar and granulated sugar and gradually mix together on low
4.) Add the egg and vanilla extract into the mixer and mix on low
5.) Start to gradually add in the dry ingredients on low until all well combined. 
6.) Add the rolled oats and chocolate chips into the mixer and mix on low
7.) Once all ingredients are well combined, cover the bowl and put it into the fridge for 30 minutes
8.) Once ingredients have chilled, spray a sheet pan and start adding scoops of the batter to your pan. I like to roll my batter into balls before placing on the pan. This usually makes about 12-14 cookies.
9.) Bake for 15-17 minutes until top of cookie appears firm then take out of oven 

Let cool for a few minutes and then enjoy!
