5 Healthy & Easy Dinner Ideas!


Happy Monday loves! Hope y'all had a great weekend. Ours was very fun--we've definitely been enjoying the warmer weather! I'm trying really hard to get back into the swing of posting regularly on the blog. Instagram is a totally different story...but baby steps!

Since work has been SO busy lately I have been sticking to the same 5 meals for dinner. They take 20 minutes or less and are all relatively healthy while still being super tasty. 


1.) EBTB Seasoned Chicken + Roasted Asparagus:
This is a SUPER easy and healthy meal. You literally can just season up the chicken tenderloin + asparagus on the same pan and pop it in the oven on 425 for 20 minutes. Voila! The chicken is seasoned with Everything But the Bagel Seasoning from Trader Joe's and the asparagus is seasoned with olive oil and a garlic salt/parsley mix. Some nights I like to dip my chicken into Yum Yum sauce.


2.) Pesto Turkey with Rice & Heirloom Tomatoes (or Peppers)
For this meal I just brown some ground turkey, cook up some rice and toss it all together with either heirloom tomatoes or roasted bell peppers depending on my mood. I top it off with the vegan pesto from TJ's and feta. So delicious and so easy!

3.) Cauliflower Gnocchi with Shrimp or Beefless Beef
Don't have a photo of this one but I buy the cauliflower gnocchi from TJ's and almost always have a bag or two in my freezer. I just cook the gnocchi up in the microwave or skillet (depending how much time I have) and cook up some shrimp or Beyond Beef. I toss it all together with either marinara or any sauce that sounds good!


4.) Panko Tilapia with Teriyaki Rice Noodle Salad
This meal is a recent addition to my rotation. I buy frozen panko breaded fish (tilapia or cod) and throw that in the oven. If you're totally against frozen meals, you can swap this out for some baked or seared salmon but my free time is limited these days. I boil some rice noodles while sauteing a bagged cabbage mix. I throw it all in a bowl and top it with low-sodium teriyaki or coconut aminos. Add the fish on top and it is SO filling. We almost always have leftovers.


5.) Shrimp or Meatless Tacos
This has been a staple for a long time! Tacos are the EASIEST dinner and it's something I'm never not in the mood for. We always have a bag of frozen shrimp in the freezer that I easily thaw out, season up and cook in a skillet then you can just top with whatever you'd like. We alternate between using the low carb flour tortilllas or corn tortillas. Sometimes we'll actually just do taco bowls and put everything over rice instead!

  4. This is such a helpful post- weeknight dinners can be such a pain to come up with, or the really yummy ones just take too much effort. These meals seem quick AND yummy!
